I like to experiment with recipes. I usually look them over, then change them to match whatever I have on hand or with spices that sound good to me.
This is a recipe I made recently and I tried it two different ways. We first rolled it into corn tortilla's and added cheese, then fried it on the stove in canola oil (taquitos). The kids didn't like it that much but I thought it was really good with sour cream and salsa. The next day I poured it over rice and the kids like it a lot better. Go figure.
CrockPot Spicy Chicken/Pork
1 Pork Loin (about 2 lbs) or 4 Chicken Breasts
1 can of diced tomatoes with spices (like Rotel)
Place all in crockpot and cook on low for 6-8 hours.
Then pour over rice and serve, or you could try the taquitos.
Yep, really simple!
